    hot milk

    cake flour
  • 15
    ml
    baking powder
  • 2
    ml
    salt
  • 175
    ml
    wholewheat flour
  • 2
    extra-;large eggs
  • 50
    ml
    sugar
  • 50
    ml
    oil
 

Method

 
Soak the oats in the milk for 30 minutes. Sift the flour, baking powder and salt together and mix in the wholewheat flour. Beat the eggs, sugar and oil together, add the oats and milk mixture and mix well. Add to the dry ingredients and mix until smooth. Leave for 30 minutes. Heat a heavy-based frying pan and brush lightly with oil. Drop dessertspoonfuls of the batter into the heated pan and heat until tiny air bubbles appear on the surface. Turn the flapjacks and heat on the other side until ready. Serve the flapjacks hot with butter and honey or syrup.
