Brazilian pumpkin

    Crown Prince pumpkin, 18 cm in diameter

    onion, sliced

    mince

    beef stock
  • 2
    potatoes, diced
  • 3
    tomatoes, skinned and diced
  • 10
    ml
    tomato paste
  • 1
    bay leaf
  • 5
    ml
    salt
  • 1
    ml
    nutmeg
 

Method

 
Wash the pumpkin well. Cut off the top to form a lid, and pour 125 ml boiling water into the pumpkin. Replace the lid, put the pumpkin in a plastic bag and microwave for 22-25 minutes on 100 percent power or until done. Remove the pumpkin from the plastic bag and pour out the water. Place the pumpkin on a serving platter. Sauté the onion in a little oil until nearly soft. Add the mince, browning small quantities at a time. Add the stock and the potatoes. Add the remaining ingredients and simmer until the potato is soft. Spoon the filling into the prepared pumpkin and serve hot. Serves 4.
