Brandy lemon icing

  • 250
    ml
    icing sugar
  • 25
    g
    margarine, softened
  • 5
    ml
    lemon juice
  • 5
    ml
    brandy
  • 2
    ml
    grated lemon rind
 

Method

 
1. Cream icing sugar and margarine and then add other ingredients. Add more brandy if necessary, not lemon juice as the icing must dry out otherwise the biscuits will go soggy. 2. Double the quantity of ingredients and use this icing as a delicious cake topping.
