Brandy butter

    unsalted butter
  • 185
    g
    castor sugar
  • 90
    ml
    brandy
 

Method

 
1. Put butter in a food processor fitted with a metal blade. Process until white and creamy. Add sugar and process until light and fluffy. 2. Add brandy, a drop at a time, beating continuously until enough has been added to flavour the butter well. Take care the mixture does not curdle through overbeating. 3. Pile butter into a dish and serve with a spoon, or, if desired, spread the mixture about 1 cm thick over a flat surface and leave to harden. Using a fancy cutter, cut brandy butter into shapes and arrange on a serving dish.
