Ingredients (6)

1.00 kg strawberries — hulled
400.00 g sugar
500.00 ml brandy
2.00 cinnamon — stick
6.00 cloves
6.00 cardamom — pods, bruised

Method:

Halve large strawberries and leave smaller ones whole.
Spoon into sterilised jars.
Heat sugar, 500 ml water and spices in a saucepan over a low heat.
Once sugar has dissolved, simmer for 10 minutes, then remove from the heat and set aside to cool for 10 minutes.
Add the brandy then pour the liquid over the strawberries to fill the jars.
You can leave the spices in, but be sure to remove them if you prefer a less spicy flavour.
Seal jars and store in a cool dark place.
Do not store for longer than two months.
Makes 2 large jars
