  • 250
    ml
    water
  • 120
    g
    sugar
  • 150
    ml
    brandy
  • 1
    lemon leaf (optional)
  • 2
    whole cloves
  • 1
    cinnamon stick
  • 1
    kg
    plums

Method

 
Mix water and sugar and stir over low heat until sugar has dissolved. Add remaining ingredients, except plums, and simmer for about 10 minutes. Using a fine sterilised needle, prick plums and add to syrup. Simmer until fruit is tender, 15 to 20 minutes. Leave plums to mature in the syrup for at least 4 days before using. The hot fruit can also be placed in sterilised bottles and sealed. Brandied plums will keep for at least 6 months. TOTAL KILOJOULE COUNT: 6 695 kJ (1 600 Cal).
