Brandied bananas

    ml
    butter
  • 4
    bananas, quartered
  • 30
    ml
    brown sugar
  • 30
    ml
    brandy
  • 2
    ml
    ground cinnamon
  • pinch grated nutmeg
  • 60
    ml
    fresh orange juice
  • 125
    ml
    thick cream
  • 30
    ml
    natural yoghurt
 

Method

 
Heat butter in a heavy-based frying pan, and sauté bananas lightly. Add sugar and continue cooking for a second or two. Gradually add brandy, cinnamon, nutmeg and orange juice and cook for a few minutes longer. Blend thick cream and yoghurt and serve with piping hot bananas.
