    self-raising flour

    baking powder

    sunflower seeds

    coconut
  • 500
    ml
    sugar
  • 375
    g
    butter or margarine
  • 125
    ml
    oil
  • 500
    ml
    amasi (room temperature)
  • 3
    extra-large eggs
 

Method

Preheat the oven to 180 ºC and spray a large oven pan with non-stick spray or grease lightly with margarine. Mix the dry ingredients in a large mixing bowl. Melt the butter and stir in the oil and amasi. Beat in the eggs and add to the dry ingredients. Mix well and shape into balls. Arrange in an oven pan and bake for about 50-60 minutes or until done and pale brown. Turn out and cool slightly. Break the balls in half with a fork and dry at 100 ºC for 3 hours. Cool completely and store in airtight containers. Makes about 84 rusks.
