Method

 
Preheat the oven to 180 ºC (350 ºF). Spray three 13 x 23 cm loaf tins with non-stick spray. Sift together the self-raising flour, baking powder and salt in a large mixing bowl. Add the bran, sultanas, coconut and seeds and mix well. Grate the margarine into the dry ingredients and rub in with your fingertips until the mixture resembles breadcrumbs. Blend the remaining ingredients and add, mixing until a fairly stiff dough is formed. Press the dough into the prepared tins and bake for 45 minutes or until a testing skewer comes out clean when inserted into the centre of the loaves. Cut into rusks and dry in a preheated 100 ºC (200 ºF) oven. Makes 115 rusks.
