    soft brown sugar

    canola oil

    oat bran, pressed down into a cup
  • 375

    flour sifted before measuring
  • 500
    ml
    digestive bran
  • 2
    ml
    salt
  • 15
    ml
    bicarbonate of soda
  • 5
    ml
    ground cinnamon
  • 1
    large apple
  • 1
    large apple, grated
  • 250
    ml
    sultanas
  • 500
    ml
    low-fat milk
  • 5
    ml
    vanilla essence
 

Method

15 mins
 
1. Beat together eggs, sugar and oil.
2. Add all the dry ingredients, the grated apple and the sultanas.
3. Add the milk and vanilla.
4. Stir until well blended, but do not overmix.
5. Leave overnight in the refrigerator.
6. When ready to bake, stir and drop into muffin pan holes (fill 3/4 full) and bake at 180 deg C for 15 minutes.

This mixture can be kept in the fridge for up to 30 days. Do not freeze the batter. Baked muffins freeze very well.
