    bran
  • 375
    ml
    wholewheat flour
  • 250
    ml
    cake flour
  • 12
    ml
    baking powder
  • 2
    ml
    salt
  • 375
    ml
    soft brown sugar
  • 2
    eggs, well beaten
  • 5
    ml
    vanilla essence
  • 500
    ml
    milk
  • 250
    ml
    oil
  • OPTIONAL
  • cut up dates
  • dessicated coconut
  • ground nuts or raisins
 

Method

 
1. In a large bowl, mix the first 6 ingredients with an optional ingredient. 2. Add the eggs, vanilla essence and finally the milk and oil. Mix until well combined. 3. Spoon the mixture into greased muffin pans and bake in a preheated oven at 200-220 ºC until golden brown.
