Bran muffins

    extra-large eggs
  • 200
    g
    melted butter or margarine
  • 250
    ml
    black Nescafé coffee or water
  • 500
    ml
    buttermilk
  • 300
    g
    cake flour, sifted
  • 15
    ml
    baking powder
  • 750
    ml
    bran flakes
 

Method

 
Preheat oven to 180 ºC. Grease a muffin pan. Beat eggs, sugar and butter until light and creamy. Beat in the coffee or water and buttermilk. Sift together flour and baking powder, stir into butter mixture. Do not over-mix. Add bran flakes and stir to mix. Leave to rest for 20 minutes before baking. Spoon into muffin pans and bake for 20 minutes. If not using immediately, spoon mixture into an airtight container and store in refrigerator.
