    dried fruit cake mix

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease 2-3 muffin tins with 12 hollows each. Beat the eggs until pale yellow. Add the brown sugar by the spoonful and beat well. Add the oil while beating. Add the milk and mix well. Sift the cake flour, baking powder and salt together. Add the remaining ingredients and mix. Add to the egg mixture. Mix and spoon into the prepared muffin tins. Fill each hollow three quarters full with the mixture. Bake for about 20 minutes or until the muffins are baked through. (The batter can be kept ire the fridge for one month.) Makes about 30 muffins.
