Braised red cabbage

    butter

    onions, finely chopped
  • 1
    clove of garlic, finely chopped
  • 500

    red cabbage, rinsed, core removed and finely sliced
  • 225
    g
    green apples, peeled, cored and diced
  • 1
    zest and rind of an orange
  • pinch ground cinnamon
  • pinch ground cloves
  • pinch ground nutmeg
  • 30
    ml
    brown sugar
  • 30
    ml
    red wine vinegar
  • salt and freshly ground black pepper to taste
 

Method

1 hr 30 min
 
Melt the butter in a saucepan and fry the onion and garlic until soft. Add the cabbage and stir-fry for 2 minutes. Add remaining ingredients. Cover and cook over a very low heat for about 1 1/2 hours. Serves: 6 Preparation time: 20 minutes Cooking time: 1 hour 30 minutes
