Braised peas

  • 1
    cos lettuce, shredded (or leave leaves whole, if desired)
  • 1
    bunch spring onions, sliced
  • fresh or dired mint to taste
  • 500
    fresh or frozen peas
  • chicken or vegetable stock as needed
  • a hint of garlic (to taste)
  • salt and pepper to taste
  • sugar to taste


Slowly braise cos lettuce, spring onions, mint and peas in the chicken or vegetable, flavour with a hint of garlic, salt and pepper and a pinch of sugar.
Serve as a side dish with your favourite roast.
