Braised chakalaka

Ingredients

    ml
    oil
  • 1
    cinnamon stick
  • 3
    ml
    cumin seeds
  • 3
    garlic cloves, crushed
  • 800
    g
    mild chakalaka
  • 250
    ml
    red wine
  • 2
    ml
    salt and freshly ground black pepper to taste
  • 15
    ml
    chopped fresh oregano
 

Method

Heat the oil in a small cast-iron pot and fry the cinnamon and cumin seeds until the flavours are well developed.
Add the garlic, chakalaka and red wine.
Season with salt and pepper and simmer uncovered until the mixture has reduced and thickened slightly.
Taste and adjust the seasoning if necessary.
Stir in the oregano and keep warm.
