Lamb Bolognaise

  • 1
    Tbs
    lardons (or olive oil)
  • 1
    large carrot
  • 1
    celery stick
  • 1
    onion
  • 750
    g
    lamb mince
  • 1
    cup
    milk
  • 1
    can
    peeled and chopped tomatoes
  • 1/2
    can
    water
  • 1
    tsp
    sugar
  • 1
    tsp
    dry oregano
  • salt and pepper to taste
 

Method

Fry the lardons until the fat melts and add the carrot, celery and onion. Cook until soft then add the mince and brown.

Once the meat is cooked, add the milk and cook on a medium heat until all the milk is absorbed.

Add the tin of tomatoes, water, sugar and oregano and allow to simmer on a low heat for at least 1 hour.

Season 20 minutes before serving.
