Bolo casserole with dried fruit

    kg
    bolo, cut into 1 cm thick slices
  • mixture of butter and oil for frying
  • 2
    onions, chopped
  • 15
    ml
    cake flour
  • 250
    ml
    hot meat stock
  • 5
    ml
    dried origanum
  • salt and freshly ground black pepper to taste
  • 15

    soy sauce
  • 30
    ml
    wine vinegar
  • 15
    ml
    chutney
  • 125
    g
    dried apricots
  • 125
    g
    stoned prunes
 

Method

1 hr 30 min - 2 hrs
 
Preheat the oven to 160 ºC and spray an ovenproof dish with non-stick spray or butter lightly. Brown the slices of meat in the butter and oil mixture, drain on paper towelling and arrange in the prepared dish. Fry the onions in the remaining oil until tender. Sprinkle with flour and beat in the stock. Add the remaining seasonings and dried fruit and bring to the boil. Remove from the stove and pour over the meat slices. Cover with aluminium foil and bake for 1 1/2 - 2 hours or until tender. Serve with rice and steamed vegetables. Serves 6-8.
