Boiling potatoes

  • potatoes
  • salted water to cover


For even cooking, cut the potatoes into even-sized chunks. Put medium and large potatoes into cold salted water and new potatoes into boiling salted water. Cover and simmer gently for 15-20 minutes or until the potatoes feel tender when pierced with the tip of a knife. Drain immediately.
