Boerewors with herb crust

    thin boerewors

    onions, chopped

    tomatoes, skinned and diced
  • 1
    concentrated vegetable soup
  • 60

    water
  • salt and freshly ground black pepper

Method

Preheat the oven to 180 ºC. Fry the sausage in a pan until done. Cut into 5 cm pieces and place in a 1 litre ovenproof dish. Fry the onion in a little oil until tender. Add the tomato, soup and water and season with salt and pepper. Bring to the boil. Pour over the sausage in the dish. Combine the self-raising flour, mealie meal and herbs. Whisk the egg, milk and oil, add to the dry ingredients and mix well. Spoon over the sausages and spread evenly. Bake for about 20 minutes until golden brown on top. Serves 4-6.
