Bockwurst with roasted apples and onions

    Golden Delicious apples, peeled, cored and quartered

    medium potatoes, peeled and quartered

    onions, peeled and quartered

    caraway seeds
  • 4
    bay leaves
  • 2
    cinnamon sticks

    oranges, juice
  • 45
    olive oil
  • 5
    sea salt
  • freshly milled black pepper
  • 4
    bockwurst or frankfurters
  • boiling water to cover


Preheat oven to 180 ºC. Arrange apples, potatoes and onions in a roasting pan, sprinkle with sugar and caraway seeds and tuck in bay leaves and cinnamon sticks. Pour orange juice over and sprinkle with olive oil, sea salt and pepper. Roast for 1 hour, or until vegetables have softened and turned golden brown. Discard bay leaves and cinnamon sticks. Meanwhile, place bockwurst in freshly boiled water and heat through gently. Do not boil. To serve, place hot roasted apples, onions and potatoes on a platter and arrange bockwurst on top. Serve immediately.
