Bobotie salad

    small onion, chopped

    ground ginger

    turmeric
  • 30
    ml
    apricot jam
  • 50
    ml
    chutney
  • 20
    ml
    masala paste
  • 500
    g
    lamb mince
  • salt and pepper to taste
  • TOP LAYER
  • 2
    eggs, beaten
  • SALAD
  • a few rocket leaves
  • 65
    ml
    diced sweet peppers
  • olive oil
 

Method

 
Fry the onion in a little oil until soft. Add all seasonings and cook for about a minute while stirring. Add the mince and mix well. Simmer for about 15 minutes, seasoning to taste with salt and pepper. Strain off any remaining oil. Fill four round ring moulds, about 9 cm in diameter and 10 cm high, three-quarters of the way with the mince mixture. Pour the beaten eggs on top. Place under the grill until the egg layer puffs up and is cooked. Arrange the salad leaves in the middle of four plates. Decorate with sweet peppers. Loosen the bobotie carefully and use a spatula to place on the salad. Carefully remove the moulds. Serves 4.
