Method

 
Place the oil in a 31 x 20 cm glass bowl and microwave for 30 seconds on 100 per cent power. Add the onion and garlic and microwave for 3 minutes on 100 per cent power. Add the curry powder, turmeric, salt, lemon juice and mince. Mix well and microwave for 5 minutes on 100 per cent power. Stir once during the cooking process. Add the breadcrumbs, meat stock, chutney and almonds and mix well. Cover and microwave for 10 minutes on 70 per cent power. Stir once during the cooking process. Level the surface of the meat and allow to cool. Spread apricot jam over the meat, beat the egg and milk together and pour over the meat. Microwave for 20 to 25 minutes on 50 per cent power or until the custard has set. Tested in a 600 W oven.
