Ingredients (9)

syrup: sugar
25.00 ml vinegar
pudding: butter
250.00 g flour — cake
105.00 g sugar
2.50 ml ginger — ground
2.50 ml cinnamon — ground
1.00 eggs — large
120.00 ml milk
5.00 ml Bicarbonate of soda
25.00 ml jam — apricot

Method:

Oven temperature: 180°C.
1. Syrup Boil the sugar and vinegar in 250ml water for three minutes.
Remove from the heat and pour into a greased
ovenproof dish.

2. Pudding Rub the butter into the flour.
Add the sugar, ginger
and cinnamon.
Add the egg, milk and bicarbonate of soda and mix to form a soft batter.
Mix in the apricot jam.

3. Slowly pour the batter into the syrup and bake in a preheated oven for 30 minutes or until cooked through.
Serve
with custard, ice cream or cream.
