2. Pudding Rub the butter into the flour. Add the sugar, ginger
and cinnamon. Add the egg, milk and bicarbonate of soda and mix to form a soft batter. Mix in the apricot jam.
3. Slowly pour the batter into the syrup and bake in a preheated oven for 30 minutes or until cooked through. Serve
with custard, ice cream or cream.
