    syrup: sugar

    vinegar

    pudding: butter
  • 250

    cake flour
  • 105
    g
    sugar
  • 2.50
    ml
    ground ginger
  • 2.50
    ml
    ground cinnamon
  • 1
    large egg
  • 120
    ml
    milk
  • 5
    ml
    bicarbonate of soda
  • 25
    ml
    apricot jam
 

Method

Oven temperature: 180°C.
1. Syrup Boil the sugar and vinegar in 250ml water for three minutes.
Remove from the heat and pour into a greased ovenproof dish.

2. Pudding Rub the butter into the flour.
Add the sugar, ginger and cinnamon.
Add the egg, milk and bicarbonate of soda and mix to form a soft batter.
Mix in the apricot jam.

3. Slowly pour the batter into the syrup and bake in a preheated oven for 30 minutes or until cooked through.
Serve with custard, ice cream or cream.
