Blueberry muffins

    castor sugar

    baking powder

    walnuts, coarsely chopped (optional)

    extra-large egg
  • 80

    butter, melted
  • 185
    ml
    milk
  • 15
    ml
    lemon juice
  • 2
    ml
    vanilla essence
  • 100
    g
    blueberries
 

Method

 
1. Place all dry ingredients, including nuts, into a bowl.
2. In a separate bowl, beat egg, butter, milk, lemon juice and vanilla together.
3. Add the liquid with the blueberries to the dry ingredients and mix with a knife until just incorporated. Do not overmix.
4. Divide the mixture between greased deep muffin pans and bake in preheated 200 ºC oven for about 20 minutes.
Makes 12.
