Blueberry muffins

    cake flour
  • 15

    baking powder
  • 150
    g
    castor sugar
  • 2
    ml
    salt
  • 70
    g
    wholewheat flour
  • 125
    ml
    milk
  • 100
    ml
    oil
  • 425
    g
    blueberries, drained
  • 2
    small eggs (or one large)
 

Method

Preheat the oven to 220 ºC (425 °F).
Grease a muffin tin with 12 hollows well with margarine.
Sift the dry together and add the bran left behind in the sieve to the bowl.
Beat the egg, milk and oil together and mix with the dry ingredients. Add the blueberries and mix lightly.
Fill each muffin hollow three quarters of the way up with the mixture and bake for 12-15 minutes or till done and golden brown on top. Serve hot with butter.
Makes 12 muffins.
