Blueberry and almond pie

    cornflour

    blueberries, drained
  • 150

    marzipan

    milk
  • 2
    extra-large eggs, whisked
 

Method

50-55 minutes
 
Preheat the oven to 200 ºC (400 ºF). Spray a medium pie dish with non-stick spray. Mix together the oats, flour and sugar. Rub the butter into the oats mixture to make a soft dough. Press the dough into the pie dish and sprinkle the base with cornflour. Spoon the blueberries on top. Finely grate the marzipan and mix with the milk and eggs. Pour the egg mixture over the blueberries and bake far 50 to 55 minutes until the mixture has set on top and the crust is done. Serve lukewarm or cold with cream and vanilla ice cream.
