50.00 ml	lemon juice
15.00 ml	tarragon vinegar
5.00 ml	cayenne pepper
	salt
	freshly ground black pepper
50.00 ml	mayonnaise
140.00 g	blue cheese — mashed

Method:

Place the oil, wine vinegar, lemon juice, tarragon vinegar, cayenne pepper and salt and pepper to taste in a mixing bowl and beat well. Add the mayonnaise and blue cheese and mix well. Pour over the salad just before serving and keep the remaining dressing in the fridge. Makes about 600 ml dressing.
