Blue cheese bites with kumquat or fruit preserve

BLUE CHEESE LOAF
300.00 g blue cheese
250.00 g cottage cheese — chunky
65.00 ml milk
100.00 g walnuts — coarsely chopped
10.00 bread — sliced dark rye
kumquats — in brandy

Method:

Line a small loaf tin with aluminium foil, allowing enough foil to overlap the sides of the tin so it can be folded over the cheese loaf.
Slice the blue cheese into 3-5 mm thick slices. beat the cottage cheese and milk together. Arrange a layer of blue cheese in the bottom of the loaf tin. Spoon a little of the cottage cheese mixture on top and sprinkle with chopped walnuts. Repeat the layers, ending with a layer of blue cheese. Fold the aluminium foil over the loaf and chill in the fridge overnight. Remove the loaf from the tin using the foil to assist you. Cut into 1 cm thick slices. (The loaf makes about 20 slices.) Toast the rye bread in the oven until dried out, taking care it does not burn.
Place half a slice of cheese loaf on top of each slice of rye bread and garnish with half a kumquat or piece of preserve. Drizzle half a teaspoon of the kumquat or fruit preserve syrup over the cheese loaf and serve with good strong coffee.
Makes about 20 bites.
