Blueberry tart with pomegranate syrup

Method:

Pre heat oven to 160ºc Using muffin tins for this dessert cut the puff pastry into rounds that fit the muffin moulds. Place berries into the shells & place into the fridge to set/chill. In a large mixing bowl, place egg, sugar, cream, flour & ground almonds. Mix well till the mixture form a batter likeness. Remove the blue berry shells from the fridge & pour in the mixture onto the berries. Place into the oven & bake for 15 minutes till tart has set. Remove from oven & place onto a cooling rack till required.
Plating
Using a round or oval plate, place a dollop of whipped cream on the plate & place the tart onto that. Drizzle with pomegranate molasses (obtainable from Woolworths). Dust with icing sugar & garnish with a sprig of mint. Serve hot, or place the tarts onto a large platter & garnish the same & serve in the afternoon with tea
