    potatoes, peeled and quartered

    baking powder

    salt

    margarine
  • 125
    ml
    milk
  • FILLING
  • 2
    onions, sliced and sautéed
  • 300
    g
    corned beef (bully beef), mashed
  • 410
    g
    baked beans in tomato sauce
  • 50
    ml
    finely chopped parsley
  • few drops Tabasco sauce
  • salt and freshly ground black pepper
 

Method

 
Preheat the oven to ºC (350 ºF). Grease a 22 cm ovenproof dish. Boil the potatoes until soft. Drain well and mash while still hot. Add the egg, baking powder, salt, margarine and milk and mix well. Turn half the mixture into the prepared dish, spreading it on the base and along the sides of the dish. Blend the filling ingredients well and season with salt and freshly ground black pepper to taste. Spread onto the potato crust. Spoon the remaining potato mixture into a piping bag and pipe strips of the mixture across the filling. Bake for 20-30 minutes or until the crust is pale brown. Serve with a salad. Serves 4-6.
