Blackened chicken

  • SPICE MIXTURE
  • 30
    ml
    salt
  • 10
    ml
    cayenne pepper
  • 10
    ml
    paprika
  • 15
    ml
    dry onion flakes
  • 15
    ml
    peppercorns, ground
  • 5
    ml
    dry garlic flakes
  • 5
    ml
    peri-peri
  • 10
    ml
    dried origanum
  • 5
    ml
    dried thyme
  • 5
    ml
    dried basil
  • pinch mustard powder
  • pinch ground cloves
  • 6
    chicken breasts, deboned and skinned
  • oil
 

Method

 
Process all spice mixture ingredients until fine. Store in an airtight container and use as needed. Flatten each of the chicken breasts with the palm of your hand until about 5 mm thick. Sprinkle a little of the mixture on both sides of each chicken breast. Heat a pan until very hot, brush with oil and fry the chicken breasts until done and blackened on both sides. Serve with sweet 'n sour cucumbers (see recipe), yoghurt and rice. Serves 4-6.
