Blackened Cajun roasted chicken

    bag of blackened Cajun seasoning mix
  • salad, to serve

Place the chicken pieces in the roasting bag. Sprinkle the Cajun seasoning inside. Hold the bag closed and shake to coat the chicken evenly. Knot the bag loosely to seal and make two holes for the steam to escape. Place on a baking tray and bake in preheated 200 °C oven for 40-45 minutes. Cut the roasting bag open and remove the chicken. Spoon the juices from the roasting bag over the pieces and serve with a salad.
