Blackberry and apple snow

    Golden Delicious apples, peeled and sliced

  • mint leaves, to garnish

Heat apples and orange juice in a saucepan over low heat. Cook uncovered for 10 minutes until soft. Blend in a food processor until smooth, or press through a sieve. Stir in lemon rind, cover and chill for 1 hour. Put blackberries and 30 ml sugar in a saucepan and heat gently until fruit begins to soften and juices run (2-3 minutes). Whisk egg white until stiff and add remaining sugar gradually, until mixture forms stiff peaks. Fold in apple purée. Divide blackberries between 4 glasses and spoon over apple mixture. Garnish with mint leaves. Serves 4.
