Ingredients (14)

225.00 g flour — self-raising
salt — just a pinch
125.00 g butter
75.00 g castor sugar
3.00 eggs — extra-large
1.00 orange
275.00 g apples — Golden Delicious, peeled, cored, finely chopped
225.00 g blackberries
TOPPING
150.00 ml cream
5.00 ml castor sugar
vanilla — essence
125.00 g blackberries
15.00 ml castor sugar
1.00 cake tin, greased and base lined

Method:

1. Preheat the oven to 180 ºC. Sift the flour and salt into a bowl and rub in the butter. Add the sugar and gradually stir in the eggs, orange rind and 30 ml juice.
2. Carefully stir in the fruit, then spoon the mixture into the tin. Bake for 45 to 55 minutes. Cool on a wire rack.
3. Pour the cream into a bowl and whisk until soft peaks form. Carefully stir in the sugar and vanilla essence.
4. Just before serving, pile on top of the cooled cake. Top with the blackberries and sprinkle with the castor sugar.
