Blackberry and apple pudding

    self-raising flour
  • pinch of salt

    butter
  • 75

    castor sugar
  • 3
    extra-large eggs
  • 1
    orange
  • 275
    g
    Golden Delicious apples, peeled and finely chopped
  • 225
    g
    blackberries
  • TOPPING
  • 150
    ml
    cream
  • 5
    ml
    castor sugar
  • few drops of vanilla essence
  • 125
    g
    blackberries
  • 15
    ml
    castor sugar
  • 1
    cake tin, greased and base lined
 

Method

45-55 minutes
 
1. Preheat the oven to 180 ºC. Sift the flour and salt into a bowl and rub in the butter. Add the sugar and gradually stir in the eggs, orange rind and 30 ml juice. 2. Carefully stir in the fruit, then spoon the mixture into the tin. Bake for 45 to 55 minutes. Cool on a wire rack. 3. Pour the cream into a bowl and whisk until soft peaks form. Carefully stir in the sugar and vanilla essence. 4. Just before serving, pile on top of the cooled cake. Top with the blackberries and sprinkle with the castor sugar.
