Ingredients (7)

400.00 g black olives
6.00 fresh basil
250.00 ml fresh chillies — 573
1.00 lemon — zest and juice
sea salt and freshly ground black pepper
1.00 mozzarella cheese — fresh ball
12.00 bread — presliced

Method:

1. Stone the olives and place in a processor along with the garlic and sweet basil. Process until fine. Add olive oil, lemon juice and rind. Process to make a paste. Season.
2. Cut mozzarella into slices. Cut the crusts off the bread.
3. Generously spread slices with the olive pesto. Place one slice of mozzarella on half the bread. Top with a spread slice and cut in half diagonally.
Serves 6
