    self-raising flour

    bicarbonate of soda

    cocoa powder
  • 5

    instant coffee powder

    ml
    castor sugar
  • 60
    ml
    light brown sugar
  • 2
    eggs, lightly beaten
  • 5
    ml
    vanilla essence
  • 250
    ml
    buttermilk
  • 125
    ml
    milk
  • 60
    g
    butter, melted
  • 250
    ml
    cream, whipped with 5 ml sugar
  • cherries, canned and drained, or fresh
  • chocolate shavings to decorate
 

Method

 
Preheat oven to 180 °C.
Grease two 20 cm diameter cake tins and line sides and base with greaseproof or baking paper.
Sift flour, bicarbonate of soda, cocoa and coffee powder into a large mixing bowl. Add sugars.
Combine eggs, liquids and melted butter and pour into the dry ingredients. Beat until just moistened.
Spread mixture evenly into prepared tins and smooth the surfaces.
Bake for 35 minutes or until a skewer comes out clean when inserted in the centre of the cake.
Leave cake for 10 minutes before turning out onto a wire rack to cool.
Sandwich cakes together with just over half the whipped cream and cherries.
Spread remaining cream on top and decorate with cherries and chocolate shavings.
