Bife a café (beef steak)

  • 1 x 250
    entrecote steak (rump, fillet or sirloin is quite acceptable here), dry and well hung
  • 1
    potato flour (or ordinary corn flour)
  • 3
  • 1
    dijon mustard (english mustard can also be quite delicious)
  • A little fresh lemon juice

Heat the butter and sear the steak quickly on both sides, season with salt and pepper.

Reduce the heat, mix the potato flour and the milk and add to the pan with the rest of the butter, stir thoroughly and continue to simmer to taste – a few minutes on each side.

A few seconds before you want to remove the steak, add the mustard and the lemon juice to the sauce, stir to mix and remove from the heat.

Serve with home-made chips.
