Best ever spareribs

    lean pork ribs, rind removed

    oil
  • 1
    onion, chopped
  • 3
    cloves garlic, crushed
  • 25

    vinegar
  • 50
    ml
    lemon juice
  • 25
    ml
    soft brown sugar
  • 40
    ml
    Worcestershire sauce
  • 250
    ml
    tomato sauce
  • 5
    ml
    prepared mustard
  • 250
    ml
    water
  • salt and freshly ground black pepper to taste
 

Method

1 hr 30 min - 2 hrs
 
Switch on the oven grill. Keep the ribs intact and grill in the oven or fry in a pan. Pour off the excess fat and transfer the ribs to an oven pan, meaty side facing down. Heat the oil and fry the onion and garlic over medium heat until tender and flavoursome. Add the remaining ingredients and bring to the boil. Pour the sauce over the ribs, turn and generously brush the other side with the mixture. Preheat the oven to 160 ºC and roast the ribs until the meat is tender and cooked, 1 1/2 to 2 hours. Cool slightly, cut into separate ribs and arrange in a serving dish. Garnish with lemon wedges and serve hot. Serves 6-8.
