Best ever egg sandwich

    eggs, hard-boiled, but soft in the centre
  • 30
    homemade or a favourite bought mayonnaise
  • 2
    slices brown bread
  • 1
    bunch of watercress or rocket, washed and dried
  • salt and freshly ground black pepper


If your children love egg & mayo sandwiches then they'll love this variation.

Sunny side up
Slice eggs thinly, using an egg slicer if you have one. Spread the mayonnaise over each slice of bread. Lay watercress or rocket leaves over slice of bread. Place egg slices on top, season with salt and pepper. Top with other slice of bread and cut in half. Easy peasy!

For something special make these dried fruit balls with raisins, apricots and honey coated in coconut. Yummy!
