Best cranberry crumpets

  • 250
    ml
    cake flour
  • 10
    ml
    baking powder
  • 30
    ml
    sugar
  • 200
    ml
    dried cranberries
  • 1
    extra large egg
  • 200
    ml
    milk
  • 15
    ml
    butter, melted
 

Method

Sift the flour, baking powder and 1ml salt together. Add the sugar.

Stir in the dried cranberries.

Beat 1 extra large egg, 200ml milk and 15ml melted butter together in a large bowl. Add these wet ingredients to the dry ingredients and mix well.

Fry teaspoons of batter in a hot greased frying pan. Fry until golden brown and turn when bubbles appear on the surface. Serve warm, drizzled with honey.
