    butter

    cake flour

    baking powder

    coconut
 

Method

 
1. Beat the sugar and butter well. Beat in the eggs, one at a time, and continue beating until well aerated. 2. Sift the flour and baking powder together and stir into the creamed butter. 3. Mix in the coconut. 4. Roll into balls, place on a tray and flatten with a fork. Cover and freeze. When hard, remove from tray, place in freezer bags, seal and store in freezer ready to bake when needed. 5. Place on baking sheet, allowing space for spreading, and bake in a preheated oven at 180 °C for 12 to 15 minutes. VARIATIONS Cherry: Add 50 g chopped glacé; cherries to the dough. Choc chip: Omit the coconut and add 250 ml chocolate chips instead. Pecan nut: Replace coconut with 100 g chopped pecan nuts.
