Berry tiramisu

    Nescafé espresso coffee
  • 125
    ml
    brandy
  • 250
    g
    sponge fingers
  • 350
    g
    mixed fresh or thawed frozen berries
  • 175
    g
    mascarpone cheese, chilled
  • 2
    eggs, separated
  • 50
    g
    icing sugar
  • 250
    ml
    cream, whipped
  • 100
    g
    white chocolate curls
 

Method

 
Mix coffee and brandy together and dip half the sponge fingers into the mixture. Arrange in a shallow 2,5 litre (10 cup) dish. Sprinkle berries over. Beat cheese, egg yolks and sugar until smith. Chill until firm. Whisk egg whites until stiff. Fold into cheese mixture. Spoon over berries, top with remaining sponge fingers and cream. Decorate with chocolate curls and chill. Serve chilled, or at room temperature.
