Berry-filled french toast

Ingredients

 
  • 250
    ml
    mascarpone cheese
  • 330
    ml
    full cream milk
  • 350
    ml
    Three Berry Jam
  • 12
    slices white bread
  • 4
    large free-range eggs
  • 5
    ml
    vanilla essence
  • 30
    ml
    castor sugar
  • 60
    ml
    butter, melted

Method

 
Mix the mascarpone cheese with 30ml milk to soften. Spread the cheese and jam onto 6 slices of bread. Top each with a plain slice of bread. Arrange the sandwiches in a large, flat dish.

Whisk the eggs, remaining milk, vanilla essence and castor sugar together. Pour the mixture over the bread and allow the bread to soak. Carefully turn the bread over to soak up the remaining liquid. Refrigerate for at least 3 hours.

One hour before you are going to eat, remove the baking dish from the fridge and allow the ingredients to stand at room temperature for 30 minutes before cooking. Carefully place the sandwiches onto greased baking sheets. Drizzle with melted butter and place in a preheated oven. Bake for 30 minutes or until set and golden brown.
