    ground ginger
  • 3

    ground cardamom
  • 3
    ml
    ground coriander
  • 3
    ml
    ground fenugreek seeds
  • 3
    ml
    grated nutmeg
  • 3
    ml
    ground cloves
  • 2
    ml
    allspice
  • 30
    ml
    salt
  • 250
    ml
    cayenne pepper
  • 125
    ml
    paprika
  • 5
    ml
    freshly ground black pepper
 

Method

 
1. In a heavy-based saucepan over very low heat, toast together the first 7 spices. Shake or stir to prevent burning. 2. Add remaining ingredients and continue toasting and stirring for a further 10 minutes. 3. Cool and store in a tightly sealed jar.
