Belgian jam squares

    cake flour

    ml
    baking powder
  • pinch salt
  • 250
    g
    butter
  • 2
    eggs
  • milk, if necessary
  • 100
    ml
    smooth apricot jam
  • 95
    ml
    coconut
 

Method

 
Preheat the oven to 180 °C and spray a baking sheet with non-stick spray or butter lightly. Sift the dry ingredients together and rub in the butter until the mixture resembles fine breadcrumbs. Beat the eggs and add to the flour mixture. Mix by hand to form a soft dough, adding a little milk if the dough is too dry. Divide the dough in half and press one half into the prepared baking sheet (it will fill half a baking sheet). Spread a thick layer of jam over the dough. Grate the remaining dough and spread the jam with 80 ml (1/3 c) of the coconut. Sprinkle remaining coconut on top and bake for 20 to 25 minutes until done and pale golden. Cool and cut into squares. Store in an airtight container.
