45.00 ml butter
15.00 ml olyfolie
0.00 0 onion — chopped
0.00 0 garlic — finely chopped
0.00 0 leeks — thinly sliced
500.00 g beetroot — chopped
500.00 g potatoes — chopped
1.50 Litres hoenderaftreksel
15.00 ml red wine vinegar
sout en varsgemaalde swartpeper na smaak
0.00 0 yoghurt
0.00 0 fresh chives — chopped

Method:

Verhit die botter en olyfolie in ‘n kastrol. Soteer die uie, knoffel en preie oor matige hitte tot sag en glansend.

Voeg die beet en aartappels by en soteer verder oor lae hitte vir 10 minute.

Voeg die aftreksel by en laat prut totdat die groente gaar en sag is. Laat effens afkoel en verpulp in ‘n voedselverwerker tot glad. Geur met rooiwynasyn, sout en varsgemaalde swartpeper.

Garneer die sop met ‘n lepel vol suurroom of Bulgaarse jogurt en gekapte grasuie en sit voor.
