Beetroot salad with parsley

    cooked beetroots, sliced
  • 100
    ml
    finely chopped parsley
  • 100
    ml
    basic salad dressing (see recipe)
  • 5
    ml
    prepared mustard
  • 100
    ml
    pine nuts OR almonds, toasted
 

Method

 
Arrange the beetroot slices in a salad bowl. Sprinkle with parsley. Blend the salad dressing (substitute lemon juice for the vinegar) and mustard and pour over the beetroot. Sprinkle with toasted nuts.
