Beetroot salad

Ingredients

  • 400
    g
    beetroot, cooked and chopped
  • 1
    medium onion, chopped
  • 10
    ml
    crushed garlic
  • 250
    ml
    natural yoghurt
  • 30
    ml
    freshly chopped parsley
 

Method

 
Mix the beetroot, onion and garlic with the yoghurt, reserving one spoon of yoghurt for garnishing, and season to taste.
Spoon into a serving dish and top with reserved yoghurt.
Sprinkle with freshly chopped parsley and serve as an accompaniment.
