Beetroot relish

Ingredients

  • 750
    g
    beetroot, grated
  • 1
    onion, grated
  • 500
    ml
    balsamic vinegar
  • 250
    ml
    verjuice
  • 625
    ml
    sugar
  • 15
    ml
    mustard seeds
  • 250
    ml
    dried cranberries
  • 1
    star anise
  • a piece of orange rind
  • salt and freshly ground black pepper
 

Method

about 30 minutes
 
Take some relish along as a gift for your hosts. It is perfect with cheese or roast turkey.
Place all the ingredients in a deep saucepan.
Simmer for about 30 minutes or until the relish becomes syrupy.
Season to taste and spoon into sterilised jars, cover with a circle of wax paper and screw on the lid.
